Astaxanthin is an abundant carotenoid pigment responsible for the pink to red colour of many marine organisms including fishes, birds and crustaceans. In the aquaculture industry, feed for trout and salmon must be supplemented with astaxanthin to achieve the appropriate degree of pigmentation.
Astaxanthin cannot be synthesised by animals and must come from the diet, as is the case with other carotenoids. Studies have shown that astaxanthin is one of the most potent natural antioxidants in nature with the ability to quench singlet oxygen, scavenge free radicals, and protect lipid membranes. It could have up to 10 times stronger anti-oxidant capability than other carotenoids and 100 times higher than vitamin E, it has been called the super vitamin E.
